Pan Roasted Sea Bass

We went in the kitchen to one of the best, most talked-about local restaurants in Oxnard, CA: Sugar Beets. Chef Martin Ledesma invited us in to see his preparation of their signature pan roasted sea bass dish, so naturally, we brought the video crew with us.

Using locally-caught seafood and local fruits and vegetables whenever possible, we watched Chef Ledesma prepare an unforgettable dish. Best of all, we got to eat it, too.

Sea bass dish
Chef Martin Ledesma's (Sugarbeets in Oxnard, CA) pan roasted sea bass with butternut squash puree and pea tendrils.
He pan-roasted the sea bass to perfection, and he also introduced us to something new: pea tendrils, the actual greens from a pea plant (they have the texture of firm spinach and a wonderful flavor of sweet peas). You can't really find pea tendrils in stores, but when you're a great chef like Chef Ledesma, you know where to get the really good stuff. He also made a butternut squash puree which went perfectly with the confetti of diced vegetables. To top it all off, there was a passion fruit essence cream sauce that gave the dish the perfect, finishing touch.
