He pan-roasted the sea bass to perfection, and he also introduced us to something new: pea tendrils, the actual greens from a pea plant (they have the texture of firm spinach and a wonderful flavor of sweet peas). You can't really find pea tendrils in stores, but when you're a great chef like Chef Ledesma, you know where to get the really good stuff. He also made a butternut squash puree which went perfectly with the confetti of diced vegetables. To top it all off, there was a passion fruit essence cream sauce that gave the dish the perfect, finishing touch.
